Fall Prosecco Punch

Fall Prosecco Punch is the perfect way to toast a fall brunch or celebrate a special occasion. This acidic and dry cocktail is a welcome change from more sugary concoctions and a playful twist on a sangria recipe.
This drink is ideal for raising a glass with breakfast strata and cinnamon buns. It's elegant but simple to put together for an impromptu celebration.

Ingredients
  

  • 1 cup pineapple juice
  • 3 cups seltzer water
  • 1 750 mL bottle Prosecco
  • 1 cup vanilla vodka
  • 2 cups sliced pineapple
  • 2 peaches thinly sliced
  • ¼ cup fresh mint plus more for garnish
  • 3 cups ice for garnish
  • 10 wedges pineapple
  • cup granulated sugar

Instructions
 

  • Combine pineapple juice, seltzer, Prosecco, vodka, peaches, and mint in a punch bowl. Stir to mix in the ice.
  • Wet the rims of your glasses with a slice of pineapple. After dipping the rims of the glasses in sugar, pour the punch into them and decorate them with a pineapple slice and a sprig of mint.
